Bikini Recipe

Makes enough for 10 servings

Ingredients for the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Drink (makes 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Directions

Making the Cordial: Put all the components in a pan, heat until it reaches a gentle boil, agitating so the sugar melts. Then, turn off the heat and leave to cool down entirely. Pour into an sterilised bottle, cap it keeping it in the refrigerator, it will last for around four weeks.

Preparing the Premix: Combine all the spirits and syrup into one big jug, let it rest for 60 minutes, then filter it best through muslin, to ensure it's perfectly clear.

When ready to serve: Pour 85ml of your premix into a cocktail shaker containing ice, gently stirring lightly for one minute to cool it down. Filter into a chilled martini glass or a similar vessel, garnish with a few cranberries adding the final touch with a quick spritz with the mandarin essence over the top.
